Italian  Pastina Soup

This recipe for Italian pastina soup combines tiny pasta and tender chicken thighs in a flavorful broth.

Step 1

Saute onion, celery and carrot.

Step 2

Add chicken (thighs or breasts.)

Step 3

Add chicken broth and simmer gently for about 15 minutes.

Step 4

Remove the cooked chicken from the pot. Shred and set aside.

Add your choice of tiny pasta to the pot. Try tiny stars! Simmer for 8 minutes, or until tender.

Step 6

Add chicken back to the soup. Top with grated parmesan cheese if you want!
