Miso Butter Sweet Potatoes

Miso butter takes just a few minutes to make, however you do need to cook the sweet potatoes first. You can bake the sweet potatoes or cook them in your Instant Pot, either whole or sliced.  Then top the warm potatoes with deliciously salty and rich miso butter and an optional drizzle of maple syrup.

  • 4 warm, cooked sweet potatoes (baked or steamed, whole or sliced)
  • 2 tablespoons unsalted butter*, softened
  • 2 tablespoons salted butter*, softened
  • 2 tablespoons white miso paste or yellow miso paste
  • 1 tablespoon maple syrup, or more to taste (optional)

*Miso paste is quite salty, which is why I recommend using a combination of salted and unsalted butter. However, you can use only unsalted butter for a less salty flavor or use only salted butter is you like saltier food.

Instructions

  1. Use a fork to mash together the butter and miso paste in a bowl. If the butter is cold, soften it in the microwave for 20 seconds first. *If you're unsure if you love the flavor of miso, add just add 1 tablespoon at first, then taste the butter before adding more. 
  2. Spoon the miso butter over warm sweet potatoes, letting it melt into the potatoes. 
  3. If you’d like to add a little sweetness, drizzle maple syrup over the miso butter sweet potatoes. 
  4. If you’d like to add savory flavor, sprinkle green onions over the potatoes.
