This miso butter recipe is made from either white or yellow miso paste. The flavor is milder and a little less salty than red miso.
I like to use salted butter for this recipe, but if you like food that tastes less salty then you can use unsalted butter.

Miso Butter Salmon
Miso butter salmon is an easy recipe that gives baked salmon rich umami flavor. This super-flavorful miso butter adds incredible flavor to salmon for an easy, fast weeknight meal.

Ingredients
- 2 tablespoons salted butter
- 1 tablespoon white or yellow miso paste
- 1 teaspoon stone ground or Dijon mustard
- 1 teaspoon lemon juice
- 1 to 1 ½ pounds salmon
Instructions
- Heat the oven 400F. Line a sheet-pan with foil.
- Pat the salmon dry with a paper towel.
- Mash together the butter, miso, mustard and lemon juice in a bowl until well combined. If the butter is not soft you can microwave it for 10 seconds; it shouldn’t be melted, just soft.
- Spread the miso butter evenly over the top of the salmon.
- Bake the salmon for 10 to 12 minutes (see notes below about salmon cooking times).
- Turn on the broiler and move the sheet-pan to the upper rack, 6-inches or so from the broiler.
- Broil the salmon for 2 to 5 minutes, until browned and bubbly on top. Turn the pan once or twice so the miso butter browns evenly. Keep an eye on the salmon while it’s broiling so the miso butter doesn’t burn.
Notes
Salmon Cooking Time
If the thickest part of the salmon is 1-inch thick, it will generally be well cooked in about 12 minutes. If the filet is 1 ½-inch thick it usually takes about 15 minutes to cook through. If you like your salmon very soft and tender, you might want to take it out of the oven slightly earlier than this (the fish will continue to cook slightly after it comes out of the oven, especially if you put foil over the top of it.)
When salmon is fully cooked (well done) it will have a darker color and will no longer be translucent pink in the middle. If you like salmon that is less well done (more like medium or medium rare) then take it out of the oven while the thickest parts are still slightly translucent.
For this recipe, keep in mind that the salmon will continue to cook while it is under the broiler. For this reason, you might want to cook the salmon for only 10 minutes, then put it under the broiler for another 2 to 5 minutes.
Salted or Unsalted butter: If you like food that is less salty, then you should use unsalted butter for this recipe.
Miso butter salmon can be served hot or cold. It's really good served cold over salad greens for lunch the next day! The salmon will stay fresh for several days in the refrigerator after it is cooked.
