This flavorful and fast ground chicken stir fry is a favorite family dinner on busy weeknights. It's made from ground chicken, bell peppers, green beans and a simple stir fry sauce that you're going to love!

A bowl of ground chicken, green beans and bell peppers over noodles.

Using ground chicken is a really quick way to make a stir fry. You don't have to deal with prepping or slicing raw meat, just put the ground chicken in a skillet and fry it up.

Ground chicken is also lean and flavorful. Depending on where you buy it, it can be an affordable protein.

If your kids won't like the meat and veggies mixed together, you can cook the ground meat and vegetables in two separate skillets.

Make a double batch of the stir fry sauce and use half to flavor the meat and half to flavor the veggies. Then, serve the ground chicken and vegetables in separate bowls on the table.

    Ingredients

This stir fry made with ground chicken and veggies has a balanced combination of meat and vegetables. The green beans and bell peppers are cooked until crisp-tender. For extra flavor, green onions are sprinkled on top before serving.

A light but flavorful stir fry sauce brings the whole dish together. The sauce is made from soy sauce and rice vinegar with just a teaspoon of maple syrup. It's so simple and so good!

    Variations and Ingredient Substitutions

Ground turkey: Ground turkey is an easy substitute for ground chicken.

Ground pork: Using ground pork instead of ground chicken will make this stir fry even more flavorful, with a meatier and slightly heavier texture.

Ginger: Thinly slice or grate 2 teaspoons of ginger or use a frozen ginger cube. Add the ginger at the same time as the garlic.

Sriracha: Make the stir fry spicy by adding a generous squeeze of sriracha sauce to your bowl.

Store-bought stir fry vegetables: Make this recipe even faster by using pre-cut stir fry vegetables from the grocery store. Depending on the vegetables, they might take slightly longer to cook.

Frozen vegetable stir fry: Frozen stir fry veggies are another option, although the texture tends to be softer and sometimes watery.

Cashews or Peanuts: For a salty crunch, add roughly chopped roasted and salted cashews or peanuts to the finished dish.

    • Method: Stir Fry
    • Cuisine: Asian

    Ingredients

    Units Scale
    • 1 tablespoon neutral-flavored oil (like canola, sunflower or peanut oil)
    • 1 pound ground chicken
    • 2 tablespoons toasted sesame oil
    • 8 ounces green beans, trimmed and cut into 1-inch lengths
    • 1 or 2 bell peppers (red, yellow or orange), thinly sliced
    • 2 garlic cloves, finely chopped or thinly sliced
    • 3 tablespoons soy sauce (low-sodium or regular)
    • 2 tablespoons rice vinegar
    • 1 teaspoon pure maple syrup
    • Green onions, chopped, for garnish

    Instructions

    1. In a large non-stick skillet or wok over medium-high heat, warm the vegetable oil.
    2. When the oil is hot, add the ground chicken. Lightly season the ground chicken with salt (about ¼ teaspoon).
    3. Cook for 6 to 8 minutes, until the meat is cooked through and browned, using a spatula to break up the ground meat as it cooks.
    4. Transfer the cooked ground chicken to a bowl.
    5. Add the sesame oil to the skillet.
    6. Add the bell pepper and green beans. Lightly season the veggies with salt.
    7. Saute for 3 to 5 minutes, until lightly browned and crisp-tender. If the vegetables start to burn, turn the heat down to medium.
    8. Add the garlic and cook for 30 seconds more.
    9. Add the cooked ground chicken back to the skillet. Mix well.
    10. Drizzle the soy sauce, rice vinegar and maple syrup over the top. Stir really well to coat the ground chicken in sauce.
    11. Cook for another minute or two until the ground meat has been reheated.
    12. Top with chopped green onions.

    Notes

This stir fry can be served over your favorite rice or noodles. Options include:
    Instant Pot white rice
    Instant Pot brown rice
    How to make rice noodles
    Knife cut style noodles
    Chow mein stir fry noodles

    Recipe Variations

You can choose to add fewer vegetables or add more, depending on what your family likes. You can also double the amount of meat; just double the sauce ingredients as well.

Instead of ground chicken, you can substitute ground turkey or pork.

If your kids really don't like veggies, you can cook the ground meat and veggies in two separate skillets. Make a double batch of the stir fry sauce and use half to flavor the meat and half to flavor the veggies. Then, serve the ground chicken and vegetables in separate bowls on the table.

Make this recipe even faster by using pre-cut stir fry vegetables from the grocery store.  Depending on the vegetables, they might take slightly longer to cook.

Frozen stir fry veggies are another option, although the texture tends to be softer and sometimes watery.

For a salty crunch, add roughly chopped roasted and salted cashews or peanuts to the finished dish.
